Raspberry Thumbprint Shortbread

1 cup butter, softened

2/3 cup powdered sugar

1/2 teaspoon pure vanilla extract

2 cups all-purpose flour

1/2 cup raspberry jam

Melted white chocolate for drizzle

DIRECTIONS: Preheat oven to 350 degrees

1. In a medium bowl, cream together butter and powdered sugar until smooth. Mix in 1/2 teaspoon pure vanilla  extract. Mix in flour until dough comes together. Scoop cookies with a small icecream scoop, and place on parchment lined cookie sheets. Make a indentation in the center of each cookie using your thumb, then fill with about a teaspoon of raspberry jam. 3. Bake for 14 to 18 minutes in preheated oven, or until lightly browned. Slightly cool on the cookie sheet. Place cookies on a cookie sheet covered with parchment , when completely cool. Drizzle with melted white chocolate, let chocolate harden , serve and  Enjoy !!!

NORTH BEND STARBUCKS DRIVE-THRU IS THE BEST !

I went through the North Bend Starbucks Drive -thru  last Sunday morning,  just like I always do. I was surprised to be told I was customer of the week !  What a honor  but,  really I think the award should go to all the amazing baristas that serve me each and everyday with a smile and a perfectly made iced tall, lots & lots of ice, 1 shot decaf, 1 1/2 pumps chocolate , with light whip  Espresso. Nothing could be better than starting or ending your day with the wonderful customer service from any one of these “SUPER STAR BARISTAS”.  You all deserve awards !  ❤  This Starbucks reminds me of  the working environment I was lucky enough to have at Scandia Bakery in Stanwood, Wash.  for over 30 years , my boss, and all the co-workers had genuine love for each other and all the great customers.  When your workplace has this kind of  incredible  love,  you can’t miss !   This Starbucks has all the qualities that I believe are essential in giving the best customer service.  Thank You to my Starbucks All Stars !!!  ❤ Dixie

TOMOKO’S FRIED RICE

COOKED RICE

2 EGGS SCRAMBLED

6 SLICES BACON, CUT SMALL

BROCCOLI, CUT SMALL

1/4 CUP FINELY CHOPPED ONION

1LARGE CARROT , SHREDDED

1 BUNCH GREEN ONION, CHOPPED

SOY SAUCE

This recipe comes from a friend of mine Tomoko Jones. She just celebrated Mother’s day after the birth of her sweet baby girl. I wanted to honor her by sharing her fried rice recipe with  you.  HAPPY MOTHER’S DAY, TOMOKO ❤

1. COOK DESIRED AMOUNT OF RICE AND SCRAMBLE TWO EGGS ; SET ASIDE.

2.CHOP 1 BUNCH GREEN ONIONS;  AND MINCE ABOUT 1/4 CUP ONION, SET ASIDE.

3. FINELY CHOP AS MUCH BROCCOLI AS DESIRED AND GRATE AS MUCH CARROTS AS DESIRED. SET ASIDE.

4.  FRY ABOUT 6 STRIPS OF BACON , FINELY CUT, UNTIL CRISPY.

5. ADD; BROCCOLI, CARROTS, ONION TO BACON IN WOK, COOK UNTIL VEGGIES ARE COOKED THROUGH.

6. ADD;  GREEN ONIONS AND RICE;  MIX WELL.

7. ADD;  SCRAMBLED EGGS AND SPRINKLE WITH DESIRED AMOUNT OF SOY SAUCE; COMBINE MIXTURE AND SERVE.

Sweet Compassion !

Last night I was fortunate enough to attend a surprise party for Rita Gregory a long time employee at North Bend Safeway.  It was wonderful seeing the compassion all the co-workers and bosses have for this wonderful lady. The night was a  Hawaiian themed event,  as a send off for her departure to  lovely Maui, Hawaii for a vacation with her sisters.  She has had a long struggle with cancer and  now once again she continues her battle.  Yet, she remains positive in the midst of her battle. She is loved by all her fellow workers and most of them consider her a “mom”.  Emotions ran high last night as they presented her with a huge amount of “LOVE” and  generous gift of money, so she will really enjoy her trip ! She was so appreciative and was filled with emotion over this overwhelming Gift of Love !  I was very impressed with the unity that all of these workers have and know that Rita will not be alone in her fight. My daughter works at this store, so I put my creativity to work and helped her by decorating palm tree cookies,  that she had baked . Made some cute floral tags and packaged each one in a cellophane bag tied with green curly ribbon. They added a great touch to this special night.

HAND DECORATED COOKIES

I just finished making some cookies that a bride is using to request special people in her life to be in her wedding. The idea is cute so I wanted to share them with you . The bride is my hairdresser, Rachael Peacock ! She works at the Hairmaster’s salon near  Safeway in North Bend, Wash. She will be getting married in the fall!  If you ever need a great haircut,  go see her, she is awesome and so very sweet. Congratulations on your engagement Rachael  !!!

I made shortbread cookies to make these little sweeties. I love the smooth look shortbread cookies have. Makes decorating look super nice. The heart shaped cookie is a wedding dress bodice  for the bridesmaids, the flower is for the flowergirl, and last but not least the badge is for the ring bearer. I used cello bags to package and then tied on a little tag with curly ribbon.  I just love decorating ❤

Cake Decorating gone wild !

I just wonder how my creative mind sets itself in motion sometimes. It seems so funny that coming up with unique and fun ideas seems just meant to be. God has truly blessed me that way. I have been a cake decorator for 40 some years now and you would think the ideas would run dry after a while. But, no !  I see things and start planning what I can come up with that will be some other rendition of it . I just “Love” this about myself . Never a dull moment in my mind : ). I happen to “LOVE” Valentine’s day and giving those special people a little something to say “I LOVE YOU”  It doesn’t have to be diamonds or flowers,  just a little something special just from you, preferably homemade. At least that’s the way I roll : ). This cute little ice cream cone is just so much fun and adorable. I found this idea in one of my magazines and thought the idea was so sweet. I first made these to donate to a Breast Cancer Awareness  bake sale sponsored by North Bend, Wash. Safeway. They were the first things to sell!  I think the possibilities are endless with these little gems. In this photo I made the meringue cookies because I couldn’t find them in the store. That makes them a bit more time consuming but, if you can find them at the grocery store they are so simple. Sugar cones, cookies, chocolate chips (melted for adhering cookies to cone), of course my imagination goes wild, so here are a few other ideas:

1. Scoop rice krispy treats with a round ice cream scoop ; adhere to cone with chocolate; let dry ; dip krispy treat part in white or colored chocolate; add a few Valentine sprinkles.

2. 2 Chocolate marshmallow cookies (store bought) adhered to cone will look like a chocolate dipped cone !

3. 2 Coconut marshmallow topped cookies (store bought) , will make a adorable cone.

4. I love detail so packaging in clear cellaphane bags, tying with curly ribbon, add a homemade tag, and  there you have it the perfect sweet for your sweetie!<3
