Orange Rhubarb Bread

1/4 c. butter, softened

1/2 c. sugar

1 egg

Zest  and juice of 1 small orange

1/4 tsp. pure vanilla

3/4 c. flour

1/4 tsp. baking powder

1/4 tsp. cream of tarter

1/8 tsp. baking soda

1/2 tsp. salt

1/4 c. sour cream

2/3 c. finely chopped fresh rhubarb

1/2 c. chopped walnuts

1. In a large bowl cream butter &  sugar until creamy. Beat in egg, orange zest and juice, vanilla.

Mix dry ingredients together, then add to creamed mixture alternately with sour cream. when fully combined, fold in rhubarb & walnuts.

2. Pour into greased and floured  loaf pan. Bake at 325 for about 40 to 45 minutes or until toothpick comes out clean.

Cool 10 minutes before removing from pan. cool completely on wire rack, cut into slices and ENJOY !!! So good ❤
