Tomoko’s Fried Rice

TOMOKO’S FRIED RICE

COOKED RICE

2 EGGS SCRAMBLED

6 SLICES BACON, CUT SMALL

BROCCOLI, CUT SMALL

1/4 CUP FINELY CHOPPED ONION

1LARGE CARROT , SHREDDED

1 BUNCH GREEN ONION, CHOPPED

SOY SAUCE

This recipe comes from a friend of mine Tomoko Jones. She just celebrated Mother’s day after the birth of her sweet baby girl. I wanted to honor her by sharing her fried rice recipe with  you.  HAPPY MOTHER’S DAY, TOMOKO ❤

1. COOK DESIRED AMOUNT OF RICE AND SCRAMBLE TWO EGGS ; SET ASIDE.

2.CHOP 1 BUNCH GREEN ONIONS;  AND MINCE ABOUT 1/4 CUP ONION, SET ASIDE.

3. FINELY CHOP AS MUCH BROCCOLI AS DESIRED AND GRATE AS MUCH CARROTS AS DESIRED. SET ASIDE.

4.  FRY ABOUT 6 STRIPS OF BACON , FINELY CUT, UNTIL CRISPY.

5. ADD; BROCCOLI, CARROTS, ONION TO BACON IN WOK, COOK UNTIL VEGGIES ARE COOKED THROUGH.

6. ADD;  GREEN ONIONS AND RICE;  MIX WELL.

7. ADD;  SCRAMBLED EGGS AND SPRINKLE WITH DESIRED AMOUNT OF SOY SAUCE; COMBINE MIXTURE AND SERVE.
